It's National Avocado Day!

When I was little, my dad would always tell us about when he was young in Mexico and how they were so poor that they only ate avocado on their birthdays. As in, each sibling (there were 11, yikes!) would get just one avocado on their birthday. Man, I'd cry every time I heard that story. I thought it was the saddest thing. Especially because I, on the other hand, never went without it. My grandfather had a generous and abundant avocado tree in his backyard that kept everyone stocked. I loved picking avos with him and eating them with just a little salt. It was the best! I actually still have dreams about that old tree. I know it's silly, but avocados always remind me of who I am, where I come from and how incredibly lucky I am in life... as cheesy as that may sound. Today is #NationalAvocadoDay and it seemed fitting to share that story. May we always be grateful for the small, seemingly unimportant joys in life, for they matter more than we realize.
And in case you didn't already know, there are incredible nutritional benefits in avocados! The high levels of micronutrients, antioxidants, fiber and good fat qualify this delicious fruit as a superfood! It contains Vitamins K, C, B5, B6 and E with traces of Vitamins A, B1, B2, B3, Magnesium, Copper, Iron, and Zinc. It has more potassium than bananas and it is one of the healthiest sources of fat you can get.
At 160 calories per 100 grams, it contains 2 grams of protein, 15 grams of fat and 8 grams of carbohydrates (although with 6 grams of fiber, only 2 of those carbs count! Wahoooo!).
