Butterscotch Protein Oats Recipe

I woke up today and knew two things: one, I needed to get out of bed and go straight to the gym or else I'd never leave the house. And two, I'd need something warm and delicious for my post-workout meal to reward myself for leaving in the first place. These are the deals I make with myself in my head on cold days lol.

If you know anything about me, you know I am a huge fan of turning my meals into desserts and vice versa. So this was no a no-brainier. Below is a super simple way to eat, yes EAT, not drink, your protein, get a serving of fruit, take in some good carbs and enjoy every bite. This is perfect post leg day!

- 45g rolled oats - 1 cup almond milk - 2 egg whites - 1 scoop (31g) vanilla protein (I used Motiv8 Performance) - 8g sugar-free instant butterscotch pudding - 75g diced apples - 10g pecans - cinnamon - liquid stevia

In a saucepan bring almond milk and oats to a simmer. Add egg whites and stir. Continue to simmer (and stir) until thick and creamy. Remove from heat, add protein and pudding, mix well. In a separate pan with a single spray of coconut oil spray, saute diced apples. Add cinnamon and 4 drops liquid stevia. Cook at medium heat until soft. After about 5 mins, add a tbsp water to deglaze pan. Mix well. Serve apples over oats, add pecans and voila!
