Chickpea Chocolate Bark Recipe

Hope everyone is out there conquering. I'm definitely trying! I'm excited to bring this fun treat to the permanent collection lol. As you may remember from my truffle recipe a couple posts ago, this one. I've been having a serious love affair with my #babefind: ChocZero. And as of recently, we have officially partnered up!

They just launched their latest product, dipping cups! They keep me stocked up with their deliciousness and I turn them into something weird! Haha. Today's creation comes from my love of salty chocolate and crunch! It's super easy, grain-free, vegan, zero sugar and zero palm oil! Such a fun and healthy snack, almost guilt free. What you'll need:

- 1 cup of cooked chickpeas (I used canned and salted, but your call!)

- 4-5 cups of ChocZero's dipping cups (OR any chocolate you choose with a tad of coconut oil to make it runny. About 1/2 tbsp oil per cup of chocolate.)

- Sea salt (optional)

- Approx. 1/2 tbsp of your choice of cooking oil for chickpeas (preferably coconut or olive, I used olive spray).

- Wax paper


Instructions:

Preheat oven at 400 degrees.

On an aluminum foil or parchment paper-lined tray, spray or grease.

Place chickpeas on tray.

Sprinkle sea salt (optional) and mix well.

Roast in oven for approx. 25 minutes.

Let cool.

In microwave, warm 2 chocolate cups together for 27 seconds.

In a bowl, combine chickpeas and chocolate. Add more sea salt to taste (optional) Mix well.

Place chickpea mixture on wax paper.

Heat 2-3 additional chocolate cups in microwave and pour over chickpea mixture.

Place in freezer for approx. 15 mins to set.

Break it up and enjoy! :)
